Pork Carnitas
Dreading the looming “what’s for dinner?” after a long day of summer fun… that is until you walk in the door to a hassle-free, delicious dinner!
Simple, crowd pleasing and a no-brainer when the summer fog has you searching for a family favorite. You don’t need a drive-thru, you just need an easy plan with little effort. Throw it in the oven and go enjoy some stress-free fun!
Pork Carnitas
Ingredients:
2 Tablespoons of Maldon Salt
2 Tablespoons of Ground Black Pepper
1 teaspoon of Onion Powder
1 teaspoon of Garlic Powder
1 teaspoon of Smoked Paprika
1 teaspoon of Chili Powder
1 teaspoon of Ground Cumin
1/2 teaspoon of Parsley
Juice of 1 Lime
Juice of 1 Mandarin Orange
Drizzle of Extra Virgin Olive Oil
Instructions:
Preheat oven to 300 degrees
Place pork in dutch oven with fat side up
Sprinkle on all the seasoning
Juice the lime and orange then drizzle with olive oil
Massage all the ingredients as a paste onto all sides of the pork
Place pork fat side up, cover and place in oven
Bake at 300 degrees for 3 hours
Turn oven down to 200 degrees and continue to cook for another 3 hours
Pork is done when it easily pulls away from bone and shreds with little effort
Using two forks, shred all the meat and remove any bone
At this point is it ready to enjoy as a “Pulled Pork” style roast or if you like it a little crispy (Our favorite!) then proceed to steps 12-14!
Heat a cast iron skillet or griddle
Place the shredded pork onto the hot griddle and toss until a nice crust has formed
Crispy Carnitas! Enjoy as a bowl with cilantro rice & black beans, as Hawaiian sliders with slaw or Carnitas tacos with guacamole and queso fresco
