Greek Ground Gyros

Bring the taste of the Mediterranean to the dinner table with this quick ground lamb gyro recipe. We like to make them like a smash version but you could always just use crumbled ground lamb as well.

Tzatziki

Ingredients:

(Mix all together and let sit in the fridge while you make the gyros.)

  • 1 1/5 cups of Plain Greek Yogurt

  • 1/3 of an English Cucumber grated

  • 1/4 of a Red Onion grated

  • 2 cloves of Garlic minced

  • 1/2 Lemon juiced

  • 2 Tablespoons of chopped fresh Dill

  • 2 Tablespoons of chopped fresh Mint

  • 3/4 Teaspoons of Maldon Sea Salt

  • Drizzle of Extra Virgin Olive OIl

Ground Lamb Gyros

Ingredients:

  • 2 pounds of 100% Pasture Raised Ground Lamb

  • 2 Tablespoons of Maldon Salt Flakes

  • 1 teaspoon of Garlic Powder

  • 1 teaspoon of Black Pepper

  • 1 teaspoon of Dried Oregano

  • 1/2 teaspoon of Paprika

  • 1/4 teaspoon of cumin

  • Package of Pita Bread

  • Feta Cheese

  • Diced Tomato

  • Diced Cucumber

  • Romaine Lettuce leaves

  • salt and pepper to taste

Instructions:

  1. Mix all the seasoning into the ground meat and form into 1/3 pound balls (tennis ball size)

  2. Crisp up one side of the pita bread on the griddle, then set aside

  3. Place a ball of meat on the griddle and then place a pita with the crispy side down onto the meat ball

  4. Using a press, completely smash down the pita creating the meat to flatten to a thin patty

  5. Cook approximately 3 mins then flip for an additional 30 seconds on that side

  6. Assemble your gyros by topping with tzatziki sauce, crumbled feta, diced tomato, cucumber and romaine. Additional salt and pepper optional

  7. OPA!!
